Course Description
“You are what you eat!” How often have most of us heard this phrase? While it may be a common saying, it remains a very true one for many good reasons. Food has the ability to affect our bodies and minds in profound ways. It can influence how we feel, think, sleep, and function every day. By choosing healthy, nutrient-dense, calorie-appropriate, organic foods and drinking adequate amounts of water, we provide ourselves with optimal opportunities to experience positive physical and mental health.
Purpose / Goal
The outcome of this course is for the learner to describe how food affects one’s mood, the types of nutrients that can improve or enhance mental health, types of eating disorders, and how to incorporate mindful eating as a way of supporting positive mental health.
Course Objectives
Upon completion you will be able to do the following:
- Describe the link between food, brain function, and mood.
- Identify the role of inflammation in physical and mental health.
- Discuss the relationship between vitamins, herbs, and mood.
- Explain food addictions, food cravings, the role of diet in premenstrual syndrome, and how food affects sleep.
- Describe the relationship between food and love.
- Explain the major eating disorders—anorexia nervosa, bulimia nervosa, and binge-eating disorder.
- Explain the relationship between adequate water intake and mood.
- Identify elements of mindful eating that enhance mental health.

Nurses, health care professionals, and interested individuals.
Criteria for Successful Completion
Complete the course post exam (CE Test) with a score of 80% or greater. Complete all fields of the course Evaluation Form.
Certificate of Completion is provided for individual courses once the course post exam is passed per criteria above.
Certificate of Completion is provided for certificate programs once all of the courses within the certificate program have been successfully completed per criteria above.
